Method
1: Chop the Salmon, in to small little pieces, season with salt and pepper and a bit of lemon juice
2: Chop the avocado in to same equally small sizes, season with salt and pepper
3: Take a metal ring (made for baking), and start by adding the avocado, and then adding the salmon (make sure there is no small holes in the layers)
4: Now chop the shallots in to very small pieces, and fry them on a frying pan until golden and crispy.
5: When all this is done, you lift the ring, and you should have a perfect round tatar of salmon and avocado.
6: Finally adding the shallots on top, finishing it off with some caviar and a bit of thyme on top.
Soya Sauce
1: Take the grapefruit and get all the juices out of the fruit. Then you add the soya in to the juice. This is for poring over the tartar, to make it taste really delicious.
